The Falafel Challenge


  • 3 Cucumbers

  • a handful of radishes

  • Fresh Dill

  • 2-3 cups of greek yogurt

  • 1 lemon

  • Naan bread (easy to make at home or can buy from store)

  • Microgreens

  • Cabbage

  • Tomatoes

  • 1 lb dry canned chickpeas

  • 1 1/2 Tbsp flour or chick pea flour

  • salt, cumin, coriander

  • 3-5 cloves garlic

  • Grapeseed oil (optional-for frying falafel balls)

See this recipe for an awesome starter kit for making falafel balls. IMPORTANT: must soak your chickpeas overnight. Take initiative.

Thinly slice radishes, cucumbers, tomatoes, and cabbage and put them in separate bowls for toppings. 

To make the Tzatziki, chop up a cucumber, add greek yogurt, squeeze in one lemon, add chopped dill, garlic, and taste test.
