The Falafel Challenge
Ingredients
3 Cucumbers
a handful of radishes
Fresh Dill
2-3 cups of greek yogurt
1 lemon
Naan bread (easy to make at home or can buy from store)
Microgreens
Cabbage
Tomatoes
1 lb dry canned chickpeas
1 1/2 Tbsp flour or chick pea flour
salt, cumin, coriander
3-5 cloves garlic
Grapeseed oil (optional-for frying falafel balls)

Thinly slice radishes, cucumbers, tomatoes, and cabbage and put them in separate bowls for toppings.
To make the Tzatziki, chop up a cucumber, add greek yogurt, squeeze in one lemon, add chopped dill, garlic, and taste test.
